What console(s) do you have at home?
If you have an XBox 360
A Kingdom for Keflings
might fit the bill.
You manage little people, and build buildings. It's sorta sanboxy and it sorta has goals. But there's no real rush to do anything.
It's fully playable solo but you can also play with friends over XBox live.
